Ingredients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 bell pepper sliced
  • 1 carrot thinly sliced
  • 1 cup broccoli or zucchini
  • 1 handful spinach or greens
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Good Flavor Add-Ons Optional
  • Lemon juice
  • Garlic 1 clove, minced
  • Paprika or cumin
  • Tahini or yogurt drizzle

Method
 

  1. Rinse quinoa well under running water.
  2. Add quinoa and water to a saucepan with a pinch of salt.
  3. Bring to a boil, then lower heat and simmer until fluffy.
  4. Heat olive oil in a pan over medium heat.
  5. Add vegetables and sauté gently until soft.
  6. Season lightly with salt and pepper.
  7. Add spinach at the end and let it wilt.
  8. Serve vegetables over warm quinoa.
