Prepare the Oven
Preheat the oven to 170°C / 340°F. Lightly grease a round baking dish.
Soften the Vegetables
Heat olive oil in a pan. Gently sauté vegetables until softened, not browned. Remove from heat and let cool slightly.
Mix the Base
In a bowl, whisk eggs with milk, salt, pepper, and herbs until just combined.
Assemble
Spread vegetables evenly in the baking dish. Pour the egg mixture over the top. Add cheese lightly if using.
Bake
Place in the oven and bake until set in the center and golden on top. Do not overbake.
Rest Before Serving
Remove from oven and let rest for 10 minutes before slicing. This helps the structure settle.
