Ingredients
  

  • 2 cups rolled oats
  • ½ cup natural peanut butter
  • 1 cup blueberries fresh or frozen
  • 2 eggs or flax eggs for plant-based
  • ½ cup milk dairy or plant-based
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 –2 tbsp honey or maple syrup optional, to taste

Method
 

  1. Preheat oven to 180°C / 350°F. Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix oats, baking powder, and salt.
  3. In another bowl, whisk peanut butter, eggs, milk, and optional sweetener until smooth.
  4. Combine wet and dry ingredients. Stir gently until just mixed.
  5. Fold in blueberries carefully.
  6. Spread mixture evenly into prepared pan.
  7. Bake for 30–35 minutes, until the center feels set.
  8. Let cool completely before slicing into bars.
