Brisket Breakfast Hash

It all starts with breakfast. Because if you can turn leftover brisket into something hearty and delicious before 10 AM, you’ve already won the day.

Ingredients
  

  • 2 cups leftover brisket diced
  • 3 medium potatoes peeled and cubed
  • 1 onion finely chopped
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil or butter
  • Salt pepper, paprika to taste
  • 2 –3 eggs optional, for topping

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add potatoes and cook until golden brown and crisp.
  3. Toss in the onions, bell pepper, and garlic. Stir until softened.
  4. Add the brisket and let it sear for a few minutes so the edges get caramelized.
  5. Sprinkle salt, pepper, and a little paprika for that smoky kick.
  6. For extra comfort, top with fried eggs — because nothing says “morning after” like a runny yolk melting into smoky brisket.

Notes

Serve it hot, maybe with a splash of hot sauce or ketchup. This dish is cozy, rustic, and full of soul — exactly what leftovers should taste like.
