Ingredients
  

  • 8 small flour tortillas
  • 1 cup prepared savory sauce tomato-based or mild seasoned sauce
  • 1 cup shredded mozzarella or mild cheese
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Dried herbs or fresh parsley optional

Method
 

  1. Preheat the oven to 180°C / 350°F. Lightly grease a muffin tray.
  2. Brush both sides of each tortilla lightly with olive oil.
  3. Press tortillas gently into the muffin cups to form small shells.
  4. Spoon a small amount of sauce into each tortilla cup.
  5. Sprinkle cheese evenly over the sauce.
  6. Season lightly with salt, pepper, and herbs if using.
  7. Bake until the edges are crisp and the cheese is melted and lightly golden.
  8. Remove from the oven and let rest for 3–5 minutes before serving.

Notes

Do not overfill the cups to keep the texture balanced.
Best enjoyed warm, once the cheese has settled and the shells are fully crisp.
Reheats well without losing structure.
