Ingredients
  

  • For the Crust
  • 1 ½ cups crushed digestive biscuits or graham crackers
  • ½ cup melted unsalted butter
  • 1 tablespoon sugar optional
  • For the Chocolate Filling
  • 1 cup heavy cream
  • 200 g dark chocolate chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the Topping
  • Whipped cream freshly whipped or lightly sweetened
  • Fresh or canned cherries pitted
  • Dark chocolate shavings optional

Method
 

  1. Prepare the Crust
  2. In a bowl, mix crushed biscuits with melted butter and sugar until evenly combined. Press the mixture firmly into a tart pan, covering the base and sides. Chill for 15 minutes to set.
  3. Make the Chocolate Filling
  4. Heat the cream gently until warm but not boiling. Remove from heat and add chopped chocolate and butter. Let it sit for a minute, then stir slowly until smooth and glossy. Add vanilla extract and a pinch of salt.
  5. Assemble the Tart
  6. Pour the chocolate filling into the chilled crust. Smooth the top gently. Refrigerate for at least 2 hours, or until the filling is fully set.
  7. Add the Toppings
  8. Before serving, top with soft whipped cream, cherries, and a light sprinkle of chocolate shavings.
