Cranberry Orange Cake

Ingredients
  

  • For the cake
  • 1 cup granulated sugar
  • 1 tablespoon orange zest
  • 1 cup plain Greek yogurt
  • 1/2 cup neutral oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh cranberries
  • For the glaze
  • 1 cup confectioners’ sugar
  • 3 tablespoons fresh orange juice
  • 1 tablespoon melted butter
  • 1/2 teaspoon orange zest

Method
 

  1. Preheat oven to 350°F and line a round cake pan with parchment.
  2. Rub sugar and orange zest together until fragrant.
  3. Whisk in yogurt, oil, eggs, and vanilla until smooth.
  4. Stir in flour, baking powder, and salt just until combined.
  5. Gently fold in cranberries.
  6. Pour batter into pan and bake until a toothpick comes out clean.
  7. Cool completely before glazing.
  8. Whisk glaze ingredients and drizzle over cake.
