Easy One-Pot Vegetable Curry

This curry is comfort in a bowl. Creamy coconut milk, colorful veggies, and warm spices — everything comes together in one pot with minimal cleanup.

Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion chopped
  • 1 cup diced carrots
  • 1 cup sweet potatoes
  • 1 cup green beans
  • 1 cup coconut milk
  • 1 tbsp curry powder
  • 1 cup vegetable broth
  • Salt and chili flakes to taste

Method
 

  1. Heat oil in a pot and sauté onion until soft.
  2. Add curry powder, then toss in all vegetables.
  3. Pour in coconut milk and broth. Simmer for 20 minutes.
  4. Adjust seasoning and cook until veggies are tender.

Notes

Basmati rice or naan bread.
