Family-Style Chickpea Curry

Ingredients
  

  • 2 cans chickpeas drained
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp curry powder
  • 1 cup coconut milk or tomato puree
  • 2 cups spinach
  • Salt to taste
  • 1 tbsp olive oil

Method
 

  1. Heat oil and sauté onion and garlic until golden.
  2. Add cumin and curry powder, then pour in coconut milk or tomato puree.
  3. Add chickpeas and simmer for 10 minutes.
  4. Stir in spinach until wilted.
  5. Serve with rice or flatbread.
