Ingredients

  • For the Pancake Batter:
  • 1 cup Kodiak Cakes Power Cakes mix any flavor you like — Buttermilk is classic!
  • ¾ cup milk adjust for thickness; whole, almond, or oat milk all work
  • 1 large egg for extra fluff and protein
  • 1 tablespoon melted butter or coconut oil
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon optional but adds warmth
  • For Cooking:
  • Non-stick spray or butter for greasing the pan
  • Extra butter for serving optional
  • For Toppings choose your favorites:
  • Fresh blueberries strawberries, or banana slices
  • A drizzle of pure maple syrup or honey
  • A spoonful of Greek yogurt or peanut butter
  • Crushed nuts or dark chocolate chips for texture

Method

  1. Step 1: Mix the Batter
  2. In a medium bowl, combine the Kodiak Cakes mix, milk, egg, melted butter, and vanilla extract. Stir until just combined — don’t overmix! The batter should be thick but pourable. If it’s too thick, add a splash more milk.
  3. Step 2: Let the Batter Rest
  4. Let the batter sit for about 2–3 minutes. This allows the whole grains to absorb the liquid, creating extra fluffy pancakes.
  5. Step 3: Heat the Pan
  6. Warm a non-stick skillet or griddle over medium heat. Lightly grease it with butter or non-stick spray. You’ll know it’s ready when a drop of water sizzles on contact.
  7. Step 4: Pour and Cook
  8. Pour ¼ cup of batter per pancake onto the hot surface. Cook until bubbles appear on the surface and the edges start to set — about 2–3 minutes. Flip gently and cook for another 1–2 minutes on the other side until golden brown.
  9. Step 5: Keep Warm
  10. If you’re making a big batch, place cooked pancakes on a baking sheet in a 200°F (95°C) oven to keep them warm while you finish the rest.
  11. Step 6: Serve and Enjoy
  12. Stack your pancakes high and top them with whatever makes you happy — fresh berries, peanut butter, or a drizzle of maple syrup. Every bite should be warm, soft, and slightly nutty with that signature Kodiak flavor.
