Loaded Veggie Quesadillas

Quesadillas are a family favorite — crispy, cheesy, and packed with flavor. Best part? You can sneak in all kinds of vegetables, and the kids won’t even notice!

Ingredients
  

  • 4 large tortillas
  • 1 cup bell peppers chopped
  • ½ cup corn
  • ½ cup spinach
  • 1 cup shredded cheese
  • 1 tsp olive oil

Method
 

  1. Heat olive oil and sauté all veggies for 3 minutes.
  2. Place a tortilla on the pan, add cheese and veggies, and top with another tortilla.
  3. Cook on both sides until golden brown.
  4. Slice and serve with yogurt or salsa.
