Mushroom and Bean Tacos

These tacos are full of earthy mushrooms and hearty beans, topped with tangy yogurt sauce.
Course: dinner

Ingredients
  

  • 1 cup mushrooms sliced
  • ½ cup black beans
  • 1 small onion chopped
  • 1 tsp cumin and paprika
  • 4 small tortillas
  • Yogurt or sour cream for topping

Method
 

  1. Sauté onion and mushrooms until soft.
  2. Add beans, cumin, paprika, salt, and pepper.
  3. Warm the tortillas and fill with the mixture.
  4. Add yogurt or sour cream on top.

Notes

A side of corn salad or guacamole.
