One-Pot Lentil Soup

Ingredients
  

  • 1 cup red lentils
  • 1 onion chopped
  • 2 carrots chopped
  • 1 tomato chopped
  • 1 teaspoon cumin powder
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • A drizzle of olive oil

Method
 

  1. Heat olive oil in a pot and add onion and carrot. Cook for 5 minutes.
  2. Add tomato and cumin powder, and stir.
  3. Add lentils and broth, bring to a boil.
  4. Lower heat, cover, and simmer for 20 minutes until lentils are soft.
  5. Season with salt and pepper, then serve warm.
