Slow Cooker Brisket Vegetable Soup

Ingredients
  

  • 1 cup leftover brisket shredded
  • 3 cups beef broth
  • 1 carrot diced
  • 1 potato cubed
  • 1 celery stalk chopped
  • 1 small onion chopped
  • 1 garlic clove minced
  • ½ tsp thyme
  • Salt & pepper to taste

Method
 

  1. Combine all ingredients in a slow cooker.
  2. Cover and cook on low for 6–7 hours (or high for 3–4).
  3. Stir occasionally. Add extra seasoning or a splash of hot sauce if desired.
