Soft & Creamy Red Lentil Soup

A soothing golden bowl.

Ingredients
  

  • 1 cup red lentils
  • 4 cups water
  • 1 onion
  • 2 garlic cloves
  • ½ tsp turmeric
  • Salt
  • Pepper
  • Lemon
  • Coriander

Method
 

  1. Step 1: Aromatics
  2. Sauté onion in a little oil until soft.
  3. Add garlic; cook briefly.
  4. Step 2: Add Lentils
  5. Add lentils and stir to coat with aromatics.
  6. Step 3: Liquid & Simmer
  7. Add water, turmeric, salt, pepper.
  8. Simmer 20 minutes until soft and creamy.
  9. Step 4: Blend (Optional)
  10. Blend slightly for smoother texture.
  11. Step 5: Serve
  12. Add coriander and a squeeze of lemon.
