- Step 1: Build the Base
- Fry onion on medium until golden.
- Add tomatoes and cook until they fully melt.
- Step 2: Add Chicken
- Stir chicken into the base.
- Cook until lightly sealed.
- Step 3: Add Spices
- Add turmeric, chili powder, coriander powder, salt.
- Cook 2 minutes until spices bloom.
- Step 4: Add Yogurt
- Lower heat.
- Add yogurt slowly while stirring to prevent curdling.
- Step 5: Cook Down
- Cover and cook 20–25 minutes on low until chicken becomes tender.
- Step 6: Finish
- Add garam masala.
- Garnish with coriander.
