Spinach & Mushroom Egg Muffins

Great for meal prep — make once and enjoy for days.

Ingredients
  

  • 6 eggs
  • 1 cup spinach
  • ½ cup mushrooms
  • Salt and pepper

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook spinach and mushrooms in a pan.
  3. Mix with beaten eggs.
  4. Pour into a muffin tray and bake for 20 minutes.
